CULH 2800 - Culinary Arts and Culture Appreciation: Study Abroad

Prerequisites: None

Open to all students, this course will involve international travel. While traveling, students will be immersed in regional food, culture, and religions respective to the region in which the travel occurs.

OUTCOMES AND OBJECTIVES
OUTCOME 1:  Upon completion of the course, the student will be able to identify various foods.

Objectives:  The student will:

  1. Critically analyze visual food forms through writing.
  2. Complete a visual journal of their observations through travel.
  3. Articulate the historical context of food of a particular location through a presentation.

OUTCOME 2:  Upon completion of the course, the student will be able to articulate the formal elements of international foods, wine, and culture.

Objectives:  The student will:

  1. Recognize regional food, wine, and culture through authentic examples.
  2. Analyze elements of regional food, wine, and culture through authentic examples.
  3. Exercise critical evaluation of food, wine, and cultural elements.

OUTCOME 3:  Upon completion of the course, the student will show a greater global competency by sharing their appreciation of its food, wine, and culture.

Objectives:  The student will:

  1. Articulate the importance of local ingredients in national dishes through world travel.
  2. Express the cultural significance of food and its location.
  3. Grasp their position as a global citizen through international travel.

COURSE CONTENT OUTLINE
The students will spend 2 weeks abroad with faculty and tour guide exploring the culture and food of different regions.
